    A wine created with coastal summer cuisine in mind, ideal for those who love drinking red even in summer, Syrah and Sangiovese grapes are the basis of this fresh and young product. You want to find the balance between a spicy and expressive nose with a delicate and elegant taste. A peculiarity of this wine is the temperature at which it can be tasted, in fact at 13/14° it expresses itself best, this makes it particularly pleasant as an aperitif or in combination with fish soups. In first courses with a marked aromatic complexity, Bixbi is the perfect wine.

    PRODUCTION METHOD:
    Manual harvesting of the bunches which macerate separately in cement tanks at a controlled temperature for approximately 3 days, after the racking follows the malolactic fermentation. At this point the blend is created by evaluating the percentages of Sangiovese and Syrah. Bixbi rests for 12 months in steel at low temperatures before moving on to refinement in the bottle.

    TASTING NOTES:
    Purple in color, it expresses itself at a first sip with a large fruit, blackberry and blueberry, floral hints of violet, gradually a delicate spiciness of black pepper emerges. An important structure that hides behind the typical aromas of the vines from which it comes, but which explodes gracefully after a few sips and conquers the palate. Good persistence with silky tannins, spicy aftertaste.
